Method

Garlic butter

    Make garlic butter

    In a small bowl combine the softened unsalted butter, minced garlic, chopped parsley, lemon juice, red pepper flakes (if using) and 1/16 tsp salt. Mix thoroughly until smooth and evenly combined. Taste and adjust salt or lemon as needed.

    Spread about half of the garlic butter evenly on the cut interior of both top and bottom halves of the sandwich roll. Reserve the remaining garlic butter for finishing or to serve alongside.

    Optional: For a toasted exterior, preheat a skillet or griddle over medium heat and place the roll, buttered-side down, pressing gently for 1–2 minutes until golden and fragrant. Remove and set aside.

Sandwich assembly

    If you toasted the roll in the skillet, let it rest for 30 seconds so the interior doesn’t steam. If not, leave it at room temp.

    On the bottom half of the roll layer the meats: start with the Ovengold turkey (90 g) arranged evenly, then layer the Genoa salami (120 g) and the peppered salame (80 g). Overlap slices slightly for even coverage and to build texture.

    Place the provolone slices (4 slices) over the meats. If you prefer the cheese melted, place the assembled bottom half under a broiler for 45–60 seconds or return to the warm skillet covered with a lid for 30–45 seconds until the cheese softens and just begins to melt. Watch carefully to avoid burning.

    Top the melted (or unmelted) cheese with shredded lettuce (1/2 cup), sliced tomato (half a tomato), and the thinly sliced red onion (2 tbsp). Add pepperoncini slices if using (about 3 pieces). Season the vegetables lightly with 1/4 tsp kosher salt and 1/8 tsp freshly ground black pepper.

    If using the optional vinaigrette, whisk together the extra-virgin olive oil (1 tbsp), red wine vinegar (1/2 tbsp), Dijon mustard (1/2 tsp), honey (1/8 tsp), 1/16 tsp salt and 1/16 tsp black pepper. Drizzle about 1–2 tsp evenly over the vegetables.

    Spread remaining garlic butter on the cut side of the top half of the roll (if you didn’t toast earlier) or simply place the top half over the fillings to finish the sandwich.

    Press the sandwich gently, slice in half on a slight diagonal, and serve immediately with the reserved garlic butter or extra pepperoncini on the side.
