Prepare bacon & turkey

Cook bacon
Place a medium skillet over medium heat. Add the 3 slices of smoked bacon in a single layer and cook, flipping occasionally, until crisp and golden, about 6–8 minutes depending on thickness. Transfer bacon to a paper-towel-lined plate to drain. Reserve 1 tsp bacon fat in the skillet (or discard if preferred).

Warm turkey (optional)
If you prefer warm turkey, add the turkey slices to the same skillet over low heat for 30–60 seconds per side just to warm and pick up a hint of pepper flavor. Remove and keep warm. If using pre-seasoned cracked pepper turkey, you can skip heating it if you prefer cold deli-style.
Prepare spreads & avocado

In a small bowl, combine the 2 tbsp softened cream cheese, 1 tsp mayonnaise (optional), and 1/2 tsp lemon juice. Stir until smooth and spreadable. Season lightly with a pinch of salt.

Halve and pit the 1/2 ripe avocado. Scoop the flesh into a small bowl and mash with a fork until mostly smooth but slightly chunky. Season with 1/8 tsp kosher salt and a few grinds (about 1/8–1/4 tsp) of freshly ground black pepper. Set aside.
Toast bread

Assemble sandwich

Spread half of the cream cheese mixture evenly over one toasted bread slice. Spread the mashed avocado evenly over the other slice.

Layer the sandwich: Place the warmed or cold cracked-pepper turkey slices (4 oz) on top of the cream cheese–spread slice. Add the cooked bacon (3 slices) on top of the turkey. Add the tomato slices (2) and baby spinach (1/4 cup). Season the tomato lightly with the remaining 1/8 tsp kosher salt and add the remaining freshly ground black pepper to taste (use remaining black pepper ~1/4 tsp if needed).

Close the sandwich with the avocado-spread slice on top. Press gently, then cut in half if desired. Serve immediately.
Serving & notes

Makes 1 hearty lunch sandwich. For a lighter version use Greek yogurt mixed into the cream cheese, or swap sourdough for whole-grain bread. Add extra cracked black pepper on top for the 'Double Trouble' pepper kick.
