Method
Prepare Ingredients
- 1
Remove skin from a store-bought rotisserie chicken (if any) and shred the meat into bite-sized pieces until you have about 2 cups. Remove any large bones.
- 2
Cook bacon until crisp (pan-fry, bake at 400°F/200°C for 12–18 minutes, or microwave). Drain on paper towels and chop into bite-size pieces (about 6 slices yields ~1/2–3/4 cup chopped).
- 3
Wash and dry lettuce leaves. Slice tomato into thin rounds. If using avocado, slice just before assembling to avoid browning.
- 4
If using thick sandwich rolls or bread, pre-slice. Optionally spread butter on cut sides for toasting.
Assemble Chicken Mixture
- 5
Season and Dress Chicken
Place shredded chicken in a medium bowl. Add 1/2 cup ranch dressing, 1 tsp lemon juice (optional), 1/4 tsp kosher salt and 1/4 tsp freshly ground black pepper. Toss gently to coat evenly. Taste and adjust seasoning—add up to 1–2 tbs more ranch if you prefer a creamier mixture.
- 6
Fold in chopped bacon, reserving a small pinch (about 1–2 tbsp) for topping the sandwich for texture.
Toast Bread (optional)
- 7
Build Sandwiches
- 8
Place a lettuce leaf on the bottom half of each roll or slice of bread to act as a moisture barrier.
- 9
Divide the dressed chicken mixture evenly among the 4 sandwiches (about 1/2 cup chicken mixture per sandwich). Mound the chicken on top of the lettuce.
- 10
Top the chicken with 1 sliced cheese per sandwich. If you prefer melted cheese, place the assembled open sandwich under a broiler or in a hot oven for 1–2 minutes until the cheese just melts—watch closely.
- 11
Add 2–3 slices of tomato per sandwich and any optional add-ins like avocado slices or pickled jalapeños. Sprinkle reserved chopped bacon on top for crunch.
- 12
Spread a little extra ranch on the inside of the top bread half (about 1 teaspoon each) if you like extra dressing, then close the sandwich and press gently.
Serve
- 13
Slice sandwiches in half if desired and serve immediately. Offer extra ranch dressing and hot sauce on the side.
