Begin by washing the Cabernet Sauvignon grapes thoroughly. Remove any stems and leaves. Crush the grapes in a large container to release their juice. You can use a grape crusher or do this by hand for a more traditional approach.

In a large fermentation vessel, combine the crushed grapes with the blackberries and black currants. Add the sugar and mix well to dissolve. Pour in the water, ensuring that the mixture is well combined.

Mixing Ingredients

Sprinkle the wine yeast over the mixture and stir gently to distribute it evenly. This will initiate the fermentation process.

Adding Yeast

Cover the fermentation vessel with a clean cloth and let it sit in a dark, cool place for about 7 to 10 days. Stir the mixture daily to promote fermentation.

Fermentation

Once the fermentation period is complete, press the mixture to extract the juice from the solids. Use a wine press or a fine mesh strainer to separate the liquid from the fruit pulp.

Pressing the Wine

Transfer the pressed liquid into a clean glass carboy or wine barrel. Add the black pepper at this stage for an added hint of spice. Seal the container with an airlock and let it age for a minimum of 3 to 6 months.

Aging the Wine

After aging, taste the wine and adjust sweetness or flavor if desired. Once satisfied, transfer the wine into clean bottles using a siphon. Seal with corks and store in a cool, dark place.
