If using egg white, perform a dry shake: combine Empress Indigo Gin, St. Germain, fresh lemon juice, simple syrup, and the egg white in a cocktail shaker without ice.
Dry shake vigorously for about 15 seconds to emulsify the egg white and create a silky texture.
Add a generous amount of ice to the shaker (about 1 cup) and shake again vigorously for 10–15 seconds to properly chill and dilute the drink.
If not using egg white, combine the gin, St. Germain, lemon juice, and simple syrup in the shaker with ice and shake vigorously for 10–15 seconds.
Discard the ice or water from the chilled glass and fine-strain the cocktail into the glass using a Hawthorne strainer and, if desired, a fine mesh strainer to remove any small ice shards or egg white bubbles.
Garnish with a lemon twist expressed over the drink (run the peel around the rim and drop it in) or float an edible flower for an elegant presentation.
Serve immediately.
