Combine and chill
Add 3 oz sake, 0.75 oz Calpico concentrate, 0.5 oz fresh lime juice, 0.25 oz yuzu juice, and 0.25 oz simple syrup into a cocktail shaker.
Add ice and shake
Fill the shaker with ice (about 1 cup). Secure the lid and shake vigorously for 10–12 seconds until the outside of the shaker is cold and slightly frosted. This aerates the Calpico and chills the sake without over-diluting it.
Strain
Double-strain the mixture into a chilled coupe or Nick & Nora glass (or serve over fresh ice in a rocks glass if preferred). Use a fine mesh strainer in addition to the shaker strainer to remove small ice shards and any pulp.
Optional top
If you prefer a lighter, more effervescent drink, top with 1 oz chilled sparkling water and gently stir once to combine.
