Method
Fresh Oysters
Clean and chill
Rinse oysters under cold running water, scrubbing shells to remove grit. Place a layer of crushed ice on a shallow service platter or tray and arrange oysters on the ice to keep cold while you prepare other components.
Shuck oysters
Using an oyster knife and protected hand (kitchen towel), work the tip of the knife into the hinge of each oyster and twist to pop open. Slide the knife along the top shell to sever the adductor muscle, remove the top shell and discard. Run the knife under the oyster to free it from the bottom shell, leaving the oyster resting in its liquor. Be careful to preserve as much liquid (briny 'liquor') as possible. Place shucked oysters on the bed of ice, hinge side down so they sit level.
Marinated Cherry Tomatoes
Prepare tomatoes
Halve cherry tomatoes (leave small ones whole if preferred) and place them in a medium bowl.
Add minced shallot, thyme leaves, champagne vinegar, olive oil, sea salt and black pepper. Toss gently to coat. Let sit at room temperature for at least 20 minutes, stirring occasionally, so flavors marry and tomatoes release a bit of juice.
Just before serving, fold in chopped basil. Spoon a small mound (about 1–2 tablespoons) of marinated tomatoes onto each oyster or offer the tomatoes in a small communal ramekin so guests can top oysters themselves.
Caviar Service
Portion caviar
Keep caviar refrigerated until just before plating. Use a mother-of-pearl or plastic spoon to avoid metallic taste. Portion about 5 g (roughly 1 teaspoon) per oyster if offering as a direct topping, or place the 60 g jar on ice with a small spoon for guests to serve themselves.
Spoon a small dollop (about 1/2 teaspoon) of crème fraîche into a small spoon or onto a blini/toast point and top with 3–5 g of caviar and a pinch of chopped chives for the caviar-topped accompaniment alternative.
Condiments & Garnishes
Arrange mignonette, cocktail sauce, and horseradish into small individual ramekins or in a condiment tray. Provide lemon wedges, microgreens or frisée, and toast points/blinis on the platter so guests may customize each oyster.
If presenting highlighted offerings (e.g., a particular premium oyster or caviar pairing), place a small tasting card describing the variety and suggested accompaniments near the item.
Service & Plating
Final assembly: For a composed bite, place one shucked oyster on the shell, add 1 teaspoon of marinated cherry tomato mixture, a tiny dollop (1/4 tsp) of crème fraîche, and top with 3–5 g caviar. Garnish with a few microgreens and a light squeeze of lemon if desired. Alternatively, present oysters plain with the marinated tomatoes, caviar, and condiments on the side so guests can build their own.
Keep platter on crushed ice and serve immediately. Replace melted ice as needed to maintain temperature. Estimated per-guest portioning: if served a la carte, present oysters individually as ordered; for a 2–3 oyster tasting per person, prepare additional trays accordingly.
