Measure and combine

In a cocktail shaker, pour Origami CITY sake (3.5 fl oz), Calpico concentrate (0.75 fl oz), fresh lime juice (0.5 fl oz), yuzu juice (0.25 fl oz) and simple syrup (0.25 fl oz) if you prefer a sweeter balance. If using egg white (0.5 oz) or aquafaba, add it now.

Dry shake

If you added egg white or aquafaba, seal the shaker and dry-shake (no ice) vigorously for 12–15 seconds. This builds a silky foam and integrates the Calpico with the sake.

Shake with ice

Add 6 ice cubes to the shaker. Shake hard for 12–15 seconds until the shaker is cold to the touch and the exterior is frosty. This chills and dilutes the drink to the correct balance.

Strain

Double-strain the cocktail into a chilled coupe or Nick & Nora glass to remove ice shards and any large foam particles. If you prefer a taller, lighter serve, use a highball glass and pour over fresh ice.

Top (optional)

If you want a light effervescence, top with 1 fl oz soda water or sparkling sake. Gently stir once to combine without collapsing the foam.

Garnish & serve

Garnish with a lime wheel or thin yuzu slice on the rim. Serve immediately. The drink should present a soft, creamy body from the Calpico and egg white, bright citrus lift from lime and yuzu, and a delicate sake backbone.
