Measure

Measure out 1 oz fresh lime juice, 0.75 oz simple syrup, and 2 oz white rum and set near your work area.

Add the measured lime juice and simple syrup to a highball glass or a cocktail shaker if you prefer to mix before building.

Pour in the 2 oz white rum and stir gently (if using a shaker, give a quick gentle shake, then pour into the serving glass).

Mint & Muddling

Place 8–10 fresh mint leaves into the bottom of the serving glass.

Add 1/2 tsp granulated sugar (or a splash more simple syrup if you prefer) over the mint. The small amount of sugar helps extract the oils from the mint during muddling.

Using a muddler (or the back of a wooden spoon), gently press and twist the mint leaves 6–8 times. Aim to bruise the leaves to release aroma and oils, but avoid shredding them into tiny bits — over-muddling can produce bitterness.

Build & Finish

Add crushed ice to the muddled mint in the glass until it's about three-quarters full (approximately 1 cup).

Pour the rum, lime and simple syrup mixture over the crushed ice and muddled mint.

Top with about 3 oz club soda. Gently stir once or twice with a long spoon to combine flavors without flattening the soda.

Garnish with a fresh mint sprig (slap it between your palms first to release aroma) and a lime wheel or wedge on the rim.

Serve with a straw or stirrer. Encourage the drinker to stir occasionally to keep flavors balanced as the ice melts.
