Espresso Base
Brew and cool espresso
Brew 2 oz of very strong espresso. Let it rest for 1–2 minutes to reduce surface crema temperature, then pour into a wide-mouth container suitable for the whipped cream canister. Add 1 oz nitrous-charged cold brew or cold coffee to help balance strength and volume.
Strain any large crema solids with a fine mesh if needed so the liquid will flow smoothly into the canister.
Nitrous Infusion
Charge espresso in cream whipper
Pour the prepared espresso mixture (espresso + cold brew) into the nitrous whipped cream canister. Screw on the head and charge with one N2O cartridge according to the canister manufacturer's instructions. Shake the canister vigorously 8–10 times to fully incorporate nitrous and create a silky, foamy texture.
Let the canister rest upright for 30–60 seconds to allow microfoam to develop. Shake once more gently before dispensing.
Cocktail Assembly
Chill glass and combine spirits
Chill a coupe or martini glass in the freezer for 5 minutes or fill with ice water while assembling. In a mixing glass or shaker (no ice yet), combine 2 oz vodka, 1 oz coffee liqueur, and 0.5 oz simple syrup.
Dispense 2 oz of the nitrous-infused espresso from the canister directly into the mixing glass with the spirits. Stir gently with a spoon to homogenize — do not add ice, to preserve the nitrous foam.
Taste and adjust sweetness with up to 0.25 oz more simple syrup if desired.
Serve & Garnish
Strain and top
Remove the chilled glass from the freezer. Using a fine-mesh strainer, double-strain the cocktail into the glass to ensure a silky texture. Immediately top the cocktail by dispensing a light layer of nitrous-infused espresso foam (about 0.5–1 oz worth) from the canister over the surface to create a creamy head.
Garnish with 3 coffee beans placed on the foam and optionally grate 0.25 tsp of orange or cacao zest over the top for aromatic lift.
Serve immediately. The nitrous foam will give a velvety mouthfeel and a dense aromatic crema that sets this Espresso Martini Donati Vineyard style apart.
