Method
Basic Deviled Eggs
Cook the eggs
Place 12 large eggs in a single layer in a saucepan and cover with cold water by 1 inch. Bring to a rolling boil over medium-high heat. Once boiling, remove from heat, cover the pan, and let sit for 10 minutes for fully hard-cooked yolks.
Prepare filling
Slice peeled eggs in half lengthwise. Remove yolks and place yolks in a medium bowl; set whites on a platter. Mash yolks with a fork until crumbly. Add 1 cup mayonnaise, 2 tablespoons Dijon mustard, 1 teaspoon white wine vinegar, 1 teaspoon salt, and 1 teaspoon freshly ground black pepper. Stir or whisk until very smooth and creamy. Taste and adjust seasoning. Fold in 2 tablespoons finely chopped chives.
Pipe or spoon filling
Transfer yolk mixture to a pastry bag fitted with a large star or round tip (or use a zip-top bag with a corner snipped). Pipe or spoon the filling evenly into the egg white halves. Dust lightly with 1 teaspoon smoked paprika.
Bacon Jam Topping (for Bacon Jam Deviled Eggs)
Cook bacon: In a large skillet over medium heat, add 8 oz diced bacon and cook until fat renders and pieces are crisp, about 8–10 minutes. Remove crisp bacon pieces with a slotted spoon to a paper towel–lined plate; leave 2–3 tablespoons of bacon fat in the skillet.
Make jam base: Add 1 finely chopped yellow onion to the skillet with reserved bacon fat. Cook over medium-low heat until very soft and caramelized, about 12–15 minutes, stirring occasionally. Add 2 minced garlic cloves in the last 1 minute and cook until fragrant.
Finish jam: Stir in 3 tablespoons brown sugar, 2 tablespoons apple cider vinegar, 1 tablespoon maple syrup, and 1 teaspoon black pepper. Simmer gently until mixture is sticky and jammy, about 3–5 minutes. Stir in reserved crisp bacon pieces, taste and adjust seasoning. Remove from heat and let cool slightly.
Crab Topping (for Crab Deviled Eggs)
Prepare crab mix: In a small bowl, gently combine 6 oz picked-over lump crab meat, 1 teaspoon lemon zest, 1 teaspoon lemon juice, 1 teaspoon mayonnaise, 1 tablespoon finely chopped parsley, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Be careful not to mash the crab; keep large flakes intact for texture.
Assemble: Place about 1 tablespoon of the crab mixture on top of each filled deviled egg half (you can use fewer halves for larger portions). If desired, add a tiny snip of chive or microgreen on top for color.
Caviar Topping (for Caviar Deviled Eggs)
Prepare base: In a small bowl, mix 2 tablespoons crème fraîche with 1/2 teaspoon lemon zest and 1 teaspoon finely chopped fresh dill.
Assemble: Spoon or pipe the yolk filling into chosen egg halves, then add a small dollop (about 1/2 teaspoon) of the crème fraîche mixture on each. Top with about 1/4 teaspoon of high-quality caviar per egg half. Finish with a tiny sprig of dill or a light dusting of smoked paprika if desired. Keep caviar-topped eggs chilled and serve immediately.
Final Assembly and Serving
Plan portions: This recipe yields 24 deviled egg halves. Suggested toppings: Plain (no extra topping) — 7 halves; Bacon Jam — 6 halves; Crab — 6 halves; Caviar — 5 halves (adjust to guest preferences and pricing).
Chill and serve: Arrange deviled eggs on a platter. Keep chilled until ready to serve. For best texture, make the basic filling and bacon jam up to 1 day ahead (store separately). Crab and caviar toppings are best assembled within 1–2 hours of serving. Total assembled platter should be served within 2 hours if topped with caviar.
