If the bottle is warmer than about 65°F (18°C), chill it in the refrigerator for 20–30 minutes. Cline Old Vine Zinfandel is best served slightly below room temperature, around 60–65°F (15–18°C). Do not over-chill.

Remove the foil capsule and wipe the top of the bottle with a clean towel. Use a corkscrew to remove the cork smoothly. Inspect the wine for any off-odors; a healthy Old Vine Zinfandel should show ripe berry, spice, and subtle pepper notes.

Open the bottle

Pour the wine slowly into a decanter, leaving the last 1/2 inch to avoid any sediment transfer. Decant for 20–40 minutes to let aromas open and tannins soften. If you don’t have a decanter, pour into aerating glasses and swirl gently.

Decant (recommended)

Pour about 5–6 oz (150–180 ml) per glass for standard tasting. Swirl the wine in the glass to release aromas, inhale, then take a small sip to assess flavors — ripe blackberry, dark cherry, baking spices, and a touch of earth or pepper.

Pour and taste

Prepare cheese and meats: Arrange slices of aged cheddar or Manchego and an assortment of cured meats on a serving board. Cut cheese into bite-size wedges or slices for easy pairing.

Add olives and crackers: Place mixed olives in a small bowl. Arrange toasted baguette slices or crackers around the board so guests can build bites.

Chocolate pairing: Break dark chocolate into squares and place on the board. Small bites of the 70% dark chocolate pair nicely with the wine’s dark fruit and spice without overpowering it.

Serve: Present the decanted Cline Old Vine Zinfandel with the prepared board. Encourage guests to taste the wine first alone, then with small bites to explore complementary and contrasting flavors.
