Make the blue cheese-infused Crémant at least 1–2 hours ahead (preferably several hours) so flavors marry. Place 3 oz (90 ml) of Brut Crémant de Bordeaux in a small sealed container or flask with a 10–12 g (about 1 heaping tbsp) piece of strong blue cheese. Seal and refrigerate for 1–4 hours, tasting after 1 hour. When it has a noticeable but balanced blue cheese note, strain the wine through a fine mesh sieve or coffee filter into a clean container to remove solids. Use 3 oz of this infused Crémant per cocktail. Discard solids.

Prepare blue cheese-infused Crémant

Chill a coupe or Nick & Nora glass in the freezer or fill with ice water while you mix. Fill a mixing glass with plenty of fresh ice.

Chill glass and mixing tools

Add 2 oz Grey Goose vodka and 0.5 oz dry vermouth to the mixing glass with ice. Stir gently for 20–30 seconds until well chilled and slightly diluted.

Mix spirits

Empty the chilled glass of ice/water if used. Strain the vodka/vermouth mixture into the chilled glass. Carefully top with 3 oz (90 ml) of the blue cheese-infused Crémant de Bordeaux, pouring gently to preserve the bubbles.

Combine with Crémant

Garnish the drink with a blue cheese-stuffed olive or a small cube of blue cheese skewered on a cocktail pick and balanced across the glass. Optionally express a lemon twist over the surface and discard or drop it in for a bright lift.

Serve immediately while the Crémant is effervescent. Recommend one cocktail per serving.
