Cocktail Base

Method

Make Basil-Infused Spirit (if not using pre-infused Rocktown)

Infuse

Bruise 6 fresh basil leaves lightly with the back of a spoon to release oils. Place the basil leaves into a clean jar and pour in the 0.5 cup gin (or neutral spirit). Seal and let infuse at room temperature for 30 minutes to 2 hours, tasting every 30 minutes until you reach a bright basil aroma but not overwhelming vegetal bitterness. Strain out the leaves through a fine mesh and reserve the infused spirit. Chill briefly.

Prepare Cocktail

Combine base ingredients

In a cocktail shaker (or large mixing glass), add 0.25 cups syrup, 0.5 cup basil-infused spirit, and 0.5 cup freshly squeezed LEMONTINI lemon juice. Add 4-6 basil leaves into the shaker and lightly muddle once or twice to release more aroma (do not over-muddle to avoid bitterness). Add ice cubes to the shaker (about 1 cup) to chill.

Shake

Secure the shaker lid and shake vigorously for 10–12 seconds until well chilled and slightly diluted.

Strain and top

Strain the shaken mixture into four chilled flutes or coupe glasses (about 1/4 cup mixture per glass). Immediately top each glass with 1/4 cup (about 2 oz) chilled France Royale sparkling wine to create a delicate effervescence. If you prefer a lighter drink, replace up to half of the sparkling wine with club soda.

Garnish & Serve

Garnish each glass with a lemon wheel or twist and a small basil leaf tucked into the rim. Optionally, clap a basil leaf between your palms once and float it on top to release aroma as you serve.
