Prep scallops

Pat the scallops very dry with paper towels. If any side muscle remains, peel it off. Place scallops on a tray and season both sides with the fine sea salt and freshly ground black pepper. Let rest at room temperature for 10 minutes to allow seasoning to penetrate and surface to dry slightly.

Preheat pan

Place a large heavy skillet (preferably stainless steel or cast iron) over medium-high heat and let it get very hot, about 3–4 minutes. The pan should be shimmering but not smoking.

Sear scallops

Add the neutral oil to the hot pan and swirl once. Lay the scallops into the skillet in a single layer, spaced so they are not touching (you may need to cook in two batches). Do not move them. Sear for 1.5–2 minutes until a deep golden-brown crust forms on the first side.

Flip & add butter

Flip each scallop and immediately add the unsalted butter to the pan. Tilt the pan slightly and spoon the foaming butter over the scallops (baste) for 30–45 seconds to finish cooking. The scallops should be opaque through the sides and slightly translucent in the center (total cook time about 3–3.5 minutes per scallop).

Caramelize with sugar

After flipping and during the last 15–30 seconds of cooking, sprinkle the granulated sugar evenly over the scallops in the pan. Spoon the melted butter/oil-sugar mixture so the sugar dissolves and forms a thin glossy caramel on the scallop surfaces. Watch closely to avoid burning; remove from heat as soon as the caramel deepens to an amber color.

Rest briefly

Transfer scallops to a warm plate and let rest for 1 minute while you prepare the garnish. Spoon any reserved pan juices (avoid burnt bits) over the scallops.

Char lemons

While scallops rest, halve the lemons. Heat a small skillet or use the same hot pan wiped clean over high heat. Place lemon halves cut-side down and press lightly. Allow to sear until the cut surface is deeply golden and slightly charred, about 1–2 minutes. If using a grill or salamander, char to the same effect. Remove from heat.

Make finishing drizzle

Squeeze the charred lemon halves into a small bowl, catching seeds. Stir in the extra-virgin olive oil and chopped parsley. Taste and add a tiny pinch of salt if needed.

Plate & garnish

Arrange 3 scallops per serving on warmed plates. Spoon a teaspoon of the pan juices and caramel on each scallop. Drizzle a small amount (about 1/2 tsp) of the charred lemon-parsley oil over the scallops and around the plate. Garnish with microgreens or additional chopped parsley. Serve immediately with remaining charred lemon halves on the side for squeezing.
