Method
Prepare Glass
Chill and Ice
Place a highball or pint glass in the freezer for 5 minutes or fill with ice water to chill. Discard the chilling water and add the large ice cubes to the glass until it's about two-thirds full.
Build the Cocktail
Measure 1 oz dry gin, 1/2 oz fresh lime juice and 1/4 oz simple syrup into a mixing glass or small shaker. Add a handful of ice and stir (or give 5 seconds gentle shake) to combine and slightly chill the spirit mix.
Strain the gin-lime mixture over the ice in the chilled serving glass.
Slowly pour 12 oz chilled light lager beer over the back of a spoon or down the side of the glass to preserve carbonation and create a layered, effervescent top.
Finish & Garnish
If using, add 2 dashes of orange bitters on the surface to deepen aroma and add a faint bitter citrus note.
Garnish with a lime wheel on the rim and a sprig of fresh mint slapped once between your palms to release oils, then tucked into the drink.
Give the drink one very gentle stir (1–2 rotations) to integrate the layers without losing carbonation.
