Prepare glass
Rim (optional)
If you want a salted or Tajín rim, rub the lime wedge around the glass lip, then dip the rim into a shallow dish of coarse salt or Tajín. Set the glass aside.
Fill the serving glass (old fashioned or rocks glass) with fresh ice to chill while you build the cocktail.
Mix cocktail
Add 2 oz 21 Seed Orange Tequila to a cocktail shaker.
Pour in 0.75 oz freshly squeezed lime juice. (Roll a lime on the counter and cut, then squeeze.)
Add 0.75 oz prickly pear syrup. If you only have prickly pear puree, strain to remove seeds and use the same quantity; reduce to 0.5 oz and add 0.25 oz simple syrup if the puree is less sweet.
Add 0.25 oz agave syrup to balance tartness. Adjust to taste if you prefer sweeter or dryer cocktails.
Optional: add 0.25 oz orange liqueur for an extra orange note that complements the 21 Seed Orange Tequila.
Add a small pinch (about 1/8 tsp) of salt to round flavors.
Fill the shaker with ice (about 1 cup), secure the lid, and shake vigorously for 12–15 seconds until well-chilled (shaker becomes frosty).
Dump the ice from the chilled serving glass and strain the cocktail into the glass over fresh ice. Use a fine strainer if you used prickly pear puree to catch any solids.
Garnish & finish
Garnish with a lime wheel or wedge on the rim and a small slice or scoop of prickly pear placed on the lip or floated on top.
Serve immediately. Optional: provide a straw or stir stick so the drink can be re-mixed as the prickly pear settles.
