Cranberry-Orange Compote

Rinse cranberries and pick out any soft ones.

In a medium saucepan, combine 1 cup sugar, 1 cup water, orange juice and orange zest. Bring to a gentle boil over medium heat, stirring to dissolve sugar.

Add cranberries, reduce heat to medium-low, and simmer uncovered for 10–12 minutes, stirring occasionally, until most berries have burst and mixture has slightly thickened.

Stir in cinnamon, vanilla and 1 tsp salt. Taste and adjust sugar or acidity as needed. Remove from heat and let cool to warm; compote will thicken as it cools.

Sake-Infused Poached Pears

Peel pears, leaving stems intact if possible. Halve lengthwise and core with a small spoon or melon baller. If using whole pears, peel and leave whole but score bottoms so they sit flat.

In a wide saucepan, combine 1 cup sake, 2 cups water, 1 cup sugar, lemon juice, star anise, and ginger. Stir and bring to a gentle simmer over medium heat so sugar dissolves.

Add pears to the simmering liquid. Reduce heat to low and poach gently for 12–18 minutes (depending on size) until pears are tender when pierced with a knife but still hold shape.

Using a slotted spoon, transfer pears to a plate. Increase heat to medium-high and boil poaching liquid until reduced by about half and syrupy, about 6–8 minutes. Strain syrup and reserve.

When cool enough to handle, brush or spoon some of the reduced poaching syrup over pears to glaze.

Mascarpone-Yuzu Cream

In a chilled bowl, whip heavy cream to soft peaks.

In a separate bowl, beat mascarpone with powdered sugar, yuzu (or lemon) zest and juice until smooth. Fold whipped cream into mascarpone mixture gently until homogenous and airy. Keep chilled until plating.

Cranberry Crisp Topping

Preheat oven to 350°F (175°C). On a small baking sheet, combine oats, flour, brown sugar, cinnamon, and toasted almonds. Cut in cold butter with a fork or pastry cutter until mixture is crumbly.

Spread mixture on the sheet and bake 8–10 minutes, stirring halfway, until golden and crunchy. Cool completely; topping will crisp as it cools.

Assembly & Serve

Plating

Place a spoonful (about 2–3 tbs) of warm cranberry-orange compote in the center of each serving plate or shallow bowl.

Arrange one pear half (or whole pear quarter) leaning like an origami crane wing on the compote. Drizzle 1–2 teaspoons of the reduced sake-poaching syrup over each pear and around the plate.

Pipe or dollop 2–3 tablespoons of mascarpone-yuzu cream beside the pear and compote.

Scatter 1 tablespoon of the cranberry crisp topping over the compote and lightly onto the cream for crunch.

Garnish with a thin orange slice or twist perched atop the pear, 2 small microgreens or mint leaves per plate, and a light dusting of matcha or powdered sugar. Sprinkle a few toasted sesame seeds if using.

Serve immediately so pears remain warm and crisp topping stays crunchy, or serve pears slightly cooled for a subtler contrast with chilled cream.
