Crab Cakes

Method

Preparation

1

Prepare the Crab Cakes

In a large bowl, combine the mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, salt, and black pepper. Mix well. Gently fold in the jumbo lump crab meat, being careful not to break it apart. Add breadcrumbs and eggs, and mix until just combined. Form the mixture into 6-8 patties.

2

Cook the Crab Cakes

Heat the vegetable oil in a large skillet over medium heat. Add the crab cakes and cook for about 4-5 minutes on each side, or until golden brown and heated through. Transfer to a plate lined with paper towels to drain excess oil.

3

Prepare the Mixed Berry Beurre Blanc

In a saucepan, combine 1 cup of mixed berries, 1/4 cup of white wine, and 1/4 cup of heavy cream. Bring to a simmer over medium heat. Reduce the heat and add 1/2 cup of cold unsalted butter, whisking continuously until the sauce is emulsified and slightly thickened. Strain through a fine mesh sieve, if desired.

4

Prepare the Apple Slaw

In a bowl, mix together thinly sliced apples, shredded cabbage, and a dressing made from 1/4 cup of mayonnaise, 1 tbs of apple cider vinegar, salt, and pepper to taste. Toss to combine.
