Method

Grilled Angus Beef Filet

1

Prepare the Steak

Season the Angus beef filet with salt and black pepper on both sides.

2

Grill the Steak

Heat olive oil in a grill pan over medium-high heat. Grill the filet for 4-5 minutes on each side for medium-rare or until desired doneness.

Maitre d’ Hotel Butter

3

Make the Butter

In a bowl, mix the softened unsalted butter with chopped parsley, lemon juice, and minced garlic until well combined. Chill until ready to serve.

Rosemary Demi-Glace

4

Prepare the Demi-Glace

In a saucepan, combine beef stock and red wine. Bring to a boil, reduce heat and add chopped rosemary. Simmer until reduced by half. Stir in butter before serving.

Mashed Potatoes

5

Cook the Potatoes

Boil potatoes in salted water until tender, about 15 minutes. Drain and return to pot.

6

Mash the Potatoes

Add butter and milk to the potatoes. Mash until smooth and creamy. Season with salt to taste.

Roasted Vegetables

7

Prepare the Vegetables

Preheat oven to 400°F (200°C). Toss mixed vegetables with olive oil, salt, and black pepper.

8

Roast the Vegetables

Spread vegetables on a baking sheet and roast for 20-25 minutes, until tender.
