Sweet Potato Fries
Preheat and prepare
Preheat the oven to 425°F (220°C). Line two baking sheets with parchment paper or lightly oil them so fries don't stick.
Wash and cut sweet potatoes
Scrub the sweet potatoes well and dry. Trim ends and cut each potato into 1/4–1/2-inch thick sticks (about standard fry size). Try to keep pieces similar in size for even cooking.
Toss with cornstarch
Place cut sweet potatoes in a large bowl. Sprinkle the cornstarch over them and toss thoroughly so each fry has a light, even dusting. This helps create a crisper exterior.
Season and oil
In the bowl with the coated fries add 2.5 tbs olive oil, 2 tsp finely chopped fresh rosemary, 1 tsp garlic powder, 1/2 tsp smoked paprika, 1 tsp kosher salt, and 1/2 tsp freshly ground black pepper. Toss gently but thoroughly until fries are evenly coated.
Arrange on baking sheets
Spread the fries in a single layer across the prepared baking sheets, leaving space between pieces. Crowding causes steaming and soggy fries. Use two sheets if needed so fries are not touching.
Bake and rotate
Bake at 425°F (220°C) for 15 minutes. Remove sheets from oven and use a spatula to flip the fries and rotate the position of the sheets (top to bottom). Return to oven and bake another 10–12 minutes until edges are browned and crisp but centers are tender. Total bake time about 25–27 minutes depending on thickness and oven.
Broil for extra crisp
If you want extra crispness, switch oven to broil for the final 1–2 minutes, watching closely to prevent burning. Remove as soon as edges are golden-brown.
Finishing & Serving
Transfer fries to a large bowl or serving platter immediately after baking.
While still hot, sprinkle with the optional 2 tbs grated Parmesan (if using) and gently toss so it melts onto the surface.
Drizzle 1 tsp fresh lemon juice over the fries and toss briefly to brighten flavors. Tear small rosemary sprigs and scatter over fries for garnish (reserve whole small sprigs for visual garnish if desired).
Leftovers can be reheated on a baking sheet in a 400°F (200°C) oven for 5–7 minutes to re-crisp; avoid microwaving which makes them soggy.
