Press and cut tofu

Remove tofu from package and drain. Wrap block in a clean kitchen towel or paper towels and place a heavy pan or a couple of cans on top. Press for 15–30 minutes to remove excess moisture. After pressing, cut tofu into 1-inch cubes (bite-size).

Dry and toss with dry mix

Pat the tofu pieces dry with a towel. In a shallow bowl, whisk together cornstarch, flour, salt, and black pepper. Toss tofu cubes gently in the dry mixture until evenly coated; shake off excess. Let coated tofu sit 5 minutes so coating adheres.

Pan-fry until crispy

Heat neutral oil in a large nonstick or cast-iron skillet over medium-high heat until shimmering. Add tofu in a single layer (work in batches if needed) and cook without moving 3–4 minutes until bottoms are golden and crisp. Flip and cook for another 3–4 minutes until all sides are golden and crisp and tofu is heated through. Transfer cooked tofu to a wire rack or paper towel–lined plate while you make the glaze. Total frying time per batch ~6–8 minutes.

Hoisin Glaze

Mix the sauce

In a small bowl combine hoisin sauce, soy sauce, rice vinegar, maple syrup (or honey), sesame oil, grated ginger, minced garlic, and 2 tablespoons water. Whisk until smooth.

Thicken glaze

In a separate tiny bowl stir the 1 teaspoon cornstarch with 1 tablespoon cold water to make a slurry. Heat a small saucepan over medium heat, add the hoisin mixture and bring to a gentle simmer, then whisk in the cornstarch slurry. Simmer 1–2 minutes until glossy and slightly thickened. Remove from heat.

Coat the tofu

Return the cooked tofu to the skillet (no additional oil needed) over low heat, pour the warm hoisin glaze over it, and gently toss or stir to coat evenly, 1–2 minutes. Heat only until glaze clings to tofu — avoid stirring too vigorously to preserve crispness.

Sesame Garnish

Sprinkle toasted sesame seeds and sliced scallions over the glazed tofu immediately after tossing. Transfer to serving platter.

Carrot & Cucumber Salad

Prepare vegetables

Peel (if desired) and julienne or shred the carrot. Cut the cucumber into thin matchsticks or use a peeler to make ribbons. Place both in a medium bowl.

Make the dressing

Whisk together rice vinegar (2 tsp), lime juice, sugar, sesame oil (1 tsp), salt, and red pepper flakes (if using) until sugar dissolves.

Toss and rest

Pour dressing over the carrot and cucumber, toss to combine, and let sit 5–10 minutes so flavors meld. Taste and adjust salt or acidity as desired.

Serve

Arrange hoisin tofu bites over steamed rice or greens (if using). Add a scoop of the carrot-cucumber salad to the side. Garnish with extra scallions and lime wedges. Serve hot so tofu stays crispy.
