Prep fillets

Pat the trigger fish fillets dry with paper towels. Trim any ragged edges and check for bones; remove if present. Lightly score the skin side (if skin-on) with two shallow diagonal cuts to prevent curling.

Make marinade: In a shallow bowl whisk together 2 tbs olive oil, 2 tbs lemon juice, 2 tsp minced garlic, 1 tbs chopped thyme, 1 tsp salt, and 1 tsp black pepper until combined.

Marinate: Place fillets in the bowl and turn to coat both sides. Let sit at room temperature for 10–15 minutes (or refrigerate up to 30 minutes). Remove fillets from marinade and let excess drip off; reserve marinade for a quick baste if desired.

Pan Finish & Sauce

Heat pan

Place a large skillet (preferably stainless steel or cast iron) over medium-high heat. Add 1 tbs extra olive oil and allow it to shimmer but not smoke (about 1–2 minutes).

Sear fillets: Add the trigger fish fillets to the hot pan, skin-side down if applicable. Press gently with a spatula for 10 seconds to ensure even contact. Sear without moving 2–3 minutes until a golden crust forms. Flip and continue cooking 1.5–3 minutes more, depending on thickness, until the fish is opaque and flakes easily (internal temp around 125–130°F / 51–54°C for just-done). Remove fillets to a warm plate and tent loosely with foil to rest.

Make pan sauce: Lower heat to medium. Add 2 tbs butter to the same skillet. When butter melts, add the finely minced shallot and sauté 30–45 seconds until softened and translucent but not browned. Carefully add 1 tbs dry white wine (or fish stock) to deglaze the pan, scraping up browned bits with a wooden spoon. Let the liquid reduce by half (~1 minute).

Finish sauce: Stir in 1 tbs lemon juice, 1 tbs rinsed capers, and the remaining 1 tbs butter to emulsify. Cook another 30 seconds until sauce is glossy. Taste and adjust seasoning with a pinch of salt and pepper if needed. Stir in 1 tbs chopped parsley just before removing from heat.

Baste & serve: Spoon some warm sauce over the rested fillets. Reserve a little sauce for plating.

To Serve

Dress greens: Toss the microgreens or baby arugula with a light drizzle of olive oil (use a scant 1 tbs if desired), 1 tsp kosher salt, and 1/2 tsp freshly ground black pepper. Arrange a small bed of greens on each plate.

Plate fish: Place a trigger fish fillet atop each bed of greens. Spoon additional pan sauce around and over the fish. Garnish with chopped parsley and serve with a lemon wedge alongside for squeezing.
