Measure and combine

Add 2 oz Star 504 Rum, 0.75 oz fresh lime juice, 0.75 oz coconut falernum, 0.25 oz demerara simple syrup, and 0.25 oz cold water into a cocktail shaker.

Add ice and bitters

Fill the shaker with ice to near the top. Add 2 dashes of Angostura bitters on top of the ingredients.

Shake

Secure the shaker and shake vigorously for 12–15 seconds until the outside of the shaker is frosty and the mixture is well chilled and slightly diluted.

Prepare glass

If desired, rub the lime wheel around the rim of a chilled rocks glass and press the rim briefly into the toasted coconut flakes to adhere a light coconut rim. Place one large clear ice cube into the glass.

Strain

Double-strain the cocktail from the shaker into the prepared rocks glass over the large ice cube using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and pulp.

Garnish & Serve

Express the oils of the lime wheel over the drink by holding it over the glass and giving it a squeeze, then drop the wheel onto the surface as garnish.

Finish by sprinkling a scant 1 tsp of finely chopped toasted coconut flakes over the top of the drink for aroma and texture. Serve immediately.
