Preparation

Chill and prep fish

Keep otoro chilled until ready. Using a very sharp knife, slice the otoro into 16 bite-sized rectangles or cubes about 3/4" x 3/4" x 1/4" (or 1/2" thick slices, depending on preference). Pat gently with paper towel to remove excess moisture and set on a chilled plate in the refrigerator.

Prepare avocado

Halve and pit the avocado. Remove the flesh and slice into 16 thin slices (or lightly mash for a spreadable texture). If slicing, cut pieces to match the footprint of the otoro bites so each base has a thin layer of avocado. Lightly brush avocado slices with a tiny amount of yuzu or lemon juice to prevent browning.

Sauce & Seasoning

In a small bowl combine soy sauce (2 tsp), yuzu juice (1 tsp), sesame oil (1/2 tsp), grated ginger (1/2 tsp) and wasabi paste (1/2 tsp). Whisk until smooth and slightly emulsified. Taste and adjust balance: more yuzu/lemon for acidity, more soy for salt. Set aside.

Lightly season the sliced otoro with a very small pinch of flaky sea salt (about 1/16 tsp per piece) and a tiny grind of black pepper. The goal is to enhance fat flavor without overpowering it.

Assembly

If using a crisp base: arrange 16 sesame crackers or nori crisps on a serving platter. Lightly brush each crisp with a trace of neutral oil if desired to add sheen.

If using avocado slices as the base: place one avocado slice (or a teaspoon of gently mashed avocado) on each cracker or directly on the serving plate to form a small platform for the otoro.

Place a piece of seasoned otoro on top of each avocado portion so the fish sits securely. For an alternate presentation, place avocado on top of otoro for a layered bite.

Using a small spoon, place about 1/4 teaspoon of black tobiko on top of each otoro piece (approximately 2 tbsp total divided among 16 bites). The roe should sit as a small crown on each bite.

Finish each bite with a light drizzle (smear) of the prepared soy-yuzu-wasabi sauce — about 1/4 teaspoon per piece — or serve the sauce on the side for dipping.

Garnish each bite with a microgreen or a small shiso leaf. Arrange finished bites on a chilled platter and serve immediately.

Serving & Notes

Serve OTORO BITES immediately while the fish is cold and the crackers remain crisp. Expect delicate, rich flavors: keep seasonings minimal so the otoro's fat shines.

For safety: use sashimi-grade otoro from a trusted supplier and keep it refrigerated until service. Consume within a few hours of slicing.
