For the Lemon Syrup (makes about 1 cup; use 0.75 oz in recipe)

Method

For the Lemon Syrup

Make syrup

Combine 1 cup fresh lemon juice, 1 cup granulated sugar, and 1/4 cup water in a small saucepan. Warm over low heat, stirring until the sugar fully dissolves (do not boil). Once dissolved, remove from heat and let cool to room temperature. Strain through a fine mesh sieve to remove pulp. Transfer to a sealed container and refrigerate. (Yields about 1 cup.)

Cocktail Preparation

Muddle cucumber

Place 6 peeled cucumber slices in a cocktail shaker. Add the lemon syrup and simple syrup. Gently muddle 6–8 times to release cucumber juice and aroma without pulverizing into mush.

Add spirits and bitters

Add 2 oz London dry gin and 2 dashes orange bitters to the shaker.

Shake

Fill the shaker with ice (about 1 cup). Shake vigorously for 12–15 seconds until the outside of the shaker is very cold.

Double strain

Double-strain the cocktail into a chilled coupe or a Nick & Nora glass using a Hawthorne strainer and a fine mesh strainer to remove cucumber solids and small ice shards.

Garnish and serve

Express the oils of a thin lemon twist over the glass (optional), then place a cucumber ribbon or wheel on the rim or floated in the glass. Serve immediately.
