Fritter Batter

Prepare Conch & Vegetables

Tenderize and chop conch

If using fresh conch, tenderize by pounding slightly with a meat mallet between plastic wrap until slightly softened (about 2–3 minutes). Rinse and drain, then finely chop or mince the conch into small pieces so it will be tender in the fritter.

Combine the chopped conch, minced onion, diced green pepper, sliced scallions, minced scotch bonnet (use less for less heat), chopped parsley, and chopped thyme in a bowl. Stir in Worcestershire sauce and lime juice. Mix and taste; season lightly with additional salt if needed and black pepper. Set aside while you make the batter so flavors marry (10–15 minutes).

Make Batter

In a medium bowl whisk together the flour, baking powder, salt, and sugar until evenly combined.

In a separate bowl, beat the eggs lightly with the cold milk. Stir the wet mixture into the dry ingredients until just combined; do not overmix. The batter should be thick but spoonable. Fold in the cold club soda or sparkling water to lighten the batter and create a slightly aerated texture.

Fold the prepared conch-and-vegetable mixture into the batter until evenly distributed. The mixture should be cohesive and hold together when scooped; if it seems too loose, add 1–2 tablespoons more flour; if too thick, add a splash of milk.

Frying

Pour vegetable oil into a deep, heavy-bottomed skillet or Dutch oven to a depth of about 1.5–2 inches (enough for the fritters to float). Heat oil to 350°F (175°C). Use a thermometer for accuracy.

While oil heats, line a baking sheet with paper towels to drain finished fritters.

When oil reaches temperature, use a tablespoon or small ice cream scoop to drop rounded scoops of batter into the oil, taking care not to overcrowd the pan (work in batches of 6–8 depending on pan size). Gently flatten slightly with the back of the scoop if needed for even cooking.

Fry the fritters until golden brown on the bottom, about 2–3 minutes, then flip and cook another 2–3 minutes until evenly golden and cooked through. Internal temperature should be hot and batter fully set. Adjust heat as necessary to maintain 325–350°F so the exterior browns without burning before the center cooks.

Use a slotted spoon to transfer fritters to the paper towel–lined sheet to drain. Sprinkle lightly with a pinch of salt while hot if desired. Repeat with remaining batter.

Let fritters rest 2–3 minutes to firm slightly, then serve warm.
