Warm beans and prepare shells

Preheat oven to 350°F (175°C). Arrange tostada shells on a baking sheet and warm 5–7 minutes until crisp and warm. Meanwhile, heat refried black beans in a small saucepan over low heat until hot, stirring occasionally. Keep warm.

To assemble base on each tostada: spread about 3 tablespoons of warm refried beans evenly over each tostada shell (total uses ~1.5 cups). Crumble goat cheese evenly over the beans so each tostada gets about 0.5 oz.

Roasted Corn Pico (Pico de Maíz Asado)

Roast the corn

If using fresh corn, remove kernels from the cob. Heat a large skillet or cast-iron over medium-high heat. Add 1 tablespoon olive oil and the corn kernels. Spread into an even layer and let cook, without stirring, 3–4 minutes until charred in spots. Stir and cook another 2–3 minutes until nicely blistered. If using frozen, thaw and pat dry first, then roast same way.

Transfer roasted corn to a bowl. Add diced tomato, red onion, minced jalapeño, chopped cilantro, 2 tablespoons lime juice, 1 tablespoon olive oil, 0.5 teaspoon salt and 0.25 teaspoon black pepper. Stir to combine and adjust seasoning to taste. Let rest 5–10 minutes to marry flavors.

Blackened Shrimp

Season shrimp

Pat shrimp dry with paper towels. In a bowl, toss shrimp with 1 teaspoon olive oil. In a small bowl combine smoked paprika, ground cumin, garlic powder, onion powder, dried oregano, cayenne, 0.5 teaspoon salt and 0.25 teaspoon black pepper. Sprinkle spice mix over shrimp and toss to coat evenly.

Cook shrimp

Heat a 10-inch skillet over medium-high heat until hot. Add a thin film of oil or nonstick spray. Add shrimp in a single layer (cook in two batches if needed). Cook 1.5–2 minutes per side until blackened at the edges and just cooked through (opaque and firm). Remove from pan and keep warm.

Eggs & Frying

Fry the eggs

Pour 1/2 cup vegetable oil into a large skillet (nonstick or cast-iron) and heat over medium heat until shimmering but not smoking (about 325–350°F if using a thermometer). Crack eggs one at a time into a small bowl. Gently slide eggs into hot oil and fry 2–3 minutes for set whites and slightly runny yolks, or longer if you prefer firmer yolks. Spoon hot oil over the whites near the yolk to help set edges. Season each egg with a pinch of salt and a light grind of black pepper.

Transfer eggs to a paper-towel-lined plate using a slotted spoon and drain briefly.

Arugula Salad & Garnish

Dress the arugula

In a medium bowl toss 3 cups baby arugula with 1 tablespoon extra-virgin olive oil and 1 teaspoon lime juice. Season lightly with a pinch of salt and toss until coated.

Slice avocado just before serving to prevent browning; fan or quarter for plating.

Assembly & Serve

On each warmed tostada shell, spread the warmed refried beans and crumbled goat cheese (from the Tostada & Base section).

Top beans with about 2–3 tablespoons of roasted corn pico per tostada, distributing evenly.

Place a small handful (about 0.5 cup) of dressed arugula on each tostada, leaving center space for the egg.

Arrange 2 blackened shrimp per tostada (12 shrimp / 6 tostadas) evenly over the arugula and pico.

Carefully place one fried egg on top of each tostada in the center. If desired, drizzle 1/3 teaspoon hot sauce over each egg (about 2 teaspoons total across the plate) or adjust to taste.

Add sliced avocado pieces and scatter remaining crumbled goat cheese. Serve immediately with lime wedges for squeezing.
