Prep and Cure Shrimp

Clean and butterfly

Rinse the amaebi under cold running water, pat dry. Remove heads (reserve if you want to deep-fry later) and gently peel shells from the bodies leaving the tail fan intact for presentation. Using a sharp knife, make a shallow lengthwise cut along the belly and remove the intestinal tract. Rinse again briefly and pat completely dry with paper towels.

Light cure for texture and flavor

Mix kosher salt and granulated sugar in a small bowl. Sprinkle the mixture evenly over both sides of the shrimp (about 1/4 tsp per shrimp). Arrange shrimp in a single layer on a tray, cover loosely, and refrigerate for 10 minutes. After 10 minutes, gently rinse the cure off with cold water and pat shrimp dry. This firms flesh and balances sweetness.

Finish with acid and zest

Toss the cleaned, cured shrimp lightly with rice vinegar and lemon zest to brighten flavor. Let sit 2–3 minutes while you prepare plating elements.

Sauce, Condiments, and Crunch

Make dipping sauce: In a small dish combine light soy sauce, yuzu or lemon juice and grated ginger. Stir to combine and set beside the shrimp.

If using wasabi, place a small pea-sized amount on the side of the plate or a tiny smear beside each shrimp for guests to add to the sauce or shrimp.

For tempura crunch: heat the neutral oil in a small skillet over medium-high heat just until shimmering (or use a hot pan). Add tempura bits or crushed crackers and toss 10–15 seconds until warmed and fragrant — do not brown. Remove immediately to a paper towel-lined plate to cool (this awakens oils and crisps the bits).

Assembly and Serving

Plate the shrimp: Arrange 3–4 shrimp per person on chilled plates with tails intact for presentation. Fan shrimp slightly or lay them flat depending on style desired.

Garnish: Place thinly sliced cucumber and a small pinch of microgreens beside the shrimp. Scatter a few tempura bits over the shrimp for crunch and texture.

Serve with a small dish of the soy-yuzu-ginger sauce, a portion of pickled ginger, and a small dab of wasabi. Encourage diners to dip the shrimp lightly or spoon a little sauce atop each piece; pickled ginger can be eaten between bites to refresh the palate.

Optional quick sear for tail texture: If you prefer slightly warm, crisp tails, heat 1 tbsp neutral oil in a small skillet until shimmering. Working quickly, sear shrimp tails (fan end) flesh-side down for 10–15 seconds to warm and slightly crisp edges, then immediately remove and let rest 30 seconds before plating.
