Wash all fruit thoroughly. Thinly slice the orange, lemon, and lime. Core and dice the apple into 1/2-inch pieces. Halve strawberries and slice peaches or nectarines if using. Remove any visible seeds.

Wash and cut fruit

Lightly muddle about half of the diced apple and a handful of the berries in a large pitcher to release juices and help infuse the sangria. Do not over-muddle; you want juice, not puree.

In a large pitcher (2–3 liters), combine the chosen wine (red or white), triple sec, and orange juice. Stir gently to combine.

Add the simple syrup or agave to the wine mixture. Taste and adjust sweetness as needed — add up to an additional 30 ml (2 tbs) if you prefer sweeter sangria.

Add all prepared fruit (slices, diced apple, berries, peaches if using) to the pitcher. Stir to distribute fruit evenly through the liquid.

Cover the pitcher and refrigerate for at least 2 hours, ideally 4–12 hours. Chilling allows the fruit to macerate and the flavors to meld. For best flavor, prepare the night before.

When ready to serve, add chilled Sprite to the pitcher and gently stir to combine. The soda provides effervescence—adjust quantity (up to 750 ml) to taste for more or less fizz.

Add ice to individual glasses or to the pitcher (up to 2 cups in the pitcher so it doesn't dilute too quickly). Stir lightly.

Ladle sangria into glasses, making sure each portion gets a mix of fruit. Garnish each glass with an orange or lemon wheel and a mint sprig.

If making a large batch to hold at room temperature for a short service, leave the Sprite out of the pitcher and add to each glass just before serving to preserve fizz.
