Roast the Sweet Potatoes

Preheat the oven to 425°F (220°C). Peel and cube the sweet potatoes into bite-sized pieces. Toss them with olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 25-30 minutes or until tender and golden, flipping halfway through.

Cook the Quinoa

In a medium pot, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and set aside.

Sear the Salmon

Heat a skillet over medium-high heat with a drizzle of olive oil. Season salmon fillets with salt and pepper. Sear the salmon for 3-4 minutes on each side or until cooked through and golden brown. Remove from heat and let rest.

Make the Chipotle Lime Vinaigrette

In a small bowl, whisk together olive oil, lime juice, chipotle in adobo, honey, salt, and pepper until well combined.

Assemble the Power Bowl

In a bowl, layer the fresh mixed greens, followed by quinoa, roasted sweet potatoes, and seared salmon. Drizzle with chipotle lime vinaigrette before serving.
