Shake base
Fill a cocktail shaker half-full with ice. Add 2 oz red Italian gin (or deep Amalfi blood orange gin), 0.5 oz fresh lemon juice, 0.5 oz simple syrup and 1 dash of bitters (if using).

Secure the shaker lid and shake vigorously for 10β12 seconds until the shaker feels cold and slightly frosted.

Strain
Strain the shaken mixture into a chilled large wine glass or tulip coupe filled about half to two-thirds with fresh ice (or leave no ice if you prefer a straight sparkling finish).

Top with Prosecco
Slowly top the drink with 3 oz well-chilled Prosecco so the bubbles lift the gin mixture gently. Pour slowly down the side of the glass to preserve effervescence.
Garnish & Finish

Gently express the oils of the blood orange or lemon wheel over the drink by holding it peel-side down and giving it a quick squeeze, then drop the wheel onto the rim or float it on top.

If using, slap the mint sprig between your palms to release aroma and tuck it beside the citrus garnish (do not overly bruise). Serve immediately.
