Risotto & Filling

    Warm the stock

    Place the chicken or vegetable stock in a saucepan and keep it at a gentle simmer over low heat; it should be hot but not boiling while you cook the rice.

    Sweat aromatics

    In a wide heavy-bottomed skillet or saucepan, heat 1 tablespoon olive oil and 1 tablespoon butter over medium heat. Add the finely chopped onion and a pinch of salt and cook, stirring, until translucent, about 5–7 minutes. Add the minced garlic and cook 30 seconds until fragrant.

    Toast rice

    Add the Arborio rice to the pan and stir to coat with fat. Cook, stirring, for 2 minutes so the rice becomes slightly translucent at the edges.

    Deglaze with wine

    Pour in the white wine and stir constantly until mostly absorbed by the rice.

    Cook risotto

    Begin adding the hot stock one ladle (about 1/2 cup) at a time, stirring frequently and allowing the liquid to be mostly absorbed before adding the next ladle. Continue until the rice is al dente and creamy, about 18–20 minutes total. You may not need all the stock; the finished risotto should be fairly thick (not soupy) so it can be formed into balls once chilled.

    Finish risotto

    Remove from heat and stir in remaining 1 tablespoon olive oil, 2 tablespoons butter, grated Parmesan, egg yolks, salt and pepper. Mix well to combine. Taste and adjust seasoning. Stir in the cooked filling of choice (up to 1 cup) if you prefer the filling mixed into the rice instead of a center; otherwise leave the filling separate for stuffing.

    Cool the risotto

    Spread the risotto into a shallow tray or baking sheet to cool quickly. Cover and refrigerate until completely cold, at least 2 hours or overnight. Cold rice holds shape when forming arancini.

Breading & Frying

    Prepare breading station

    Place the flour in a shallow bowl. Beat the 3 eggs in a second bowl until smooth. Put the breadcrumbs in a third bowl. Line a tray with parchment to hold formed, breaded balls.

    Form arancini

    With clean, slightly wet hands, scoop about 2 heaping tablespoons (roughly 1.5–2 ounces) of chilled risotto and form into a ball. Flatten slightly, place a cube of mozzarella and about 1 teaspoon of the chosen filling in the center (if using a center), then close and roll between your palms to form a smooth, sealed ball. Aim for roughly 1 1/2–2 inch diameter. Repeat until all rice is used (makes about 12–16 arancini).

    Bread the balls

    Roll each ball first in flour, shaking off excess, then dip into beaten egg, then roll thoroughly in breadcrumbs to coat. For an extra-crisp crust, repeat the egg and breadcrumb step once more. Place the breaded balls on the prepared tray and refrigerate for 15–20 minutes to firm up.

    Heat oil

    Pour vegetable oil into a deep heavy pot or deep fryer to a depth of about 3 inches (or as appropriate for your fryer). Heat oil to 350°F (175°C). Use a thermometer to check temperature; too cool and arancini will absorb oil, too hot and they brown before heating through.

    Fry arancini

    Fry 3–4 arancini at a time (don't overcrowd) for 3–4 minutes, turning occasionally, until deep golden brown and crisp. Use a slotted spoon to transfer to a paper towel-lined tray to drain. Maintain oil temperature between batches; reduce heat slightly if browning too fast and allow oil to return to temperature between batches.

    Finish & serve

    When all arancini are fried, sprinkle with chopped parsley if desired and serve hot with warmed marinara or tomato sauce and lemon wedges. If using a sauce, spoon a little on the serving plate and place arancino on top or serve sauce on the side for dipping.

    Warm sauce

    Gently warm marinara in a small saucepan over low heat. Stir in red pepper flakes and simmer 3–5 minutes. Taste and adjust seasoning. Keep warm until serving.
