    Boil pasta

    Bring a medium pot (about 2–3 liters) of water to a rolling boil. Add 1 tablespoon salt. Add 6 oz dried pasta and cook according to package directions until al dente (usually 8–11 minutes depending on shape). Reserve 1/2 cup (120 ml) of the starchy pasta cooking water, then drain the pasta, leaving it slightly wet.

    Prepare sauce

    While the pasta cooks, heat 1 tablespoon extra-virgin olive oil and 1 tablespoon butter in a large skillet over medium heat. Add 1 minced garlic clove and 1/4 teaspoon red pepper flakes; sauté for 30–45 seconds until fragrant but not browned.

    Finish pasta

    Add the drained pasta to the skillet along with 1 tablespoon reserved pasta water (add more as needed), 1 tablespoon fresh lemon juice and 1/2 teaspoon lemon zest. Toss over medium heat for 1–2 minutes to combine and let the sauce cling to the pasta. Stir in 2 tablespoons grated Parmesan and 1 tablespoon chopped fresh parsley. Season with 1/8 teaspoon freshly ground black pepper and additional salt to taste. If the pasta seems dry, add more reserved pasta water, 1 tablespoon at a time, until glossy and saucy.

    Serve

    Transfer the side pasta to a small serving bowl or plate. Finish with an extra sprinkle of Parmesan and a small drizzle of olive oil if desired. Serve warm alongside the main entree.
