Tortilla Chips
Prepare the Tortilla Chips
Cut each corn tortilla into quarters to form chips. Heat vegetable oil in a large pot over medium heat. Once the oil is hot, carefully add the tortilla pieces in batches. Fry until they are golden brown and crispy, about 2-3 minutes. Use a slotted spoon to transfer chips to a paper towel-lined plate to drain excess oil. Sprinkle with salt to taste.

Cook the Macaroni
In a pot, boil salted water and add the macaroni. Cook according to package instructions until al dente. Drain and set aside.
Make the Cheese Sauce
In a saucepan over medium heat, melt the butter. Stir in the flour and cook for about 1 minute, stirring constantly. Gradually whisk in the milk until smooth. Add garlic powder, onion powder, paprika, salt, and black pepper. Cook until the sauce thickens, about 5 minutes. Stir in the shredded cheddar cheese until melted and well combined. Finally, mix in the cooked macaroni.

Layer the Nachos
On a large serving platter, spread the fried tortilla chips evenly. Spoon the jacked mac sauce generously over the chips. Top with additional shredded cheddar cheese, sour cream, sliced jalapeños, and chopped green onions.
Serve
Serve the nachos immediately while hot, allowing everyone to dig in and enjoy!
