    Prepare the Broth

    In a saucepan, heat the vegetable broth over medium heat. Keep it warm but not boiling as you will use it gradually in the risotto.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

    Cook the Mushrooms

    Add the wild mushrooms to the pot and sauté for about 5-7 minutes, or until they are tender and any released liquid has evaporated.

Cooking the Risotto

    Add the Arborio Rice

    Stir in the Arborio rice and cook for 1-2 minutes, allowing the rice to absorb the flavors and become slightly translucent.

    Add the Broth Gradually

    Begin adding the warm vegetable broth, one ladleful at a time, stirring frequently. Wait until the liquid is almost completely absorbed before adding the next ladle. Continue this process for about 18-20 minutes, or until the rice is creamy and al dente.

    Finish the Risotto

    Once the rice is cooked, remove the pot from heat. Stir in the grated Parmesan cheese and season with salt and black pepper to taste. Add the fresh parsley and mix well.

    Serve the risotto warm, garnished with extra parsley and a sprinkle of Parmesan cheese if desired.
