For the Mahi Mahi

    Prepare the Marinade

    In a small bowl, mix the olive oil, lime juice, garlic powder, paprika, salt, and black pepper to create a marinade.

    Marinate the Fish

    Place the Mahi Mahi fillets in a shallow dish and pour the marinade over them. Make sure the fish is well-coated. Let it marinate for at least 15 minutes.

    Grill the Fish

    Preheat your grill to medium-high heat. Grill the marinated Mahi Mahi for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

    Diced the ripe mango, finely chop the red onion, and jalapeño pepper (remove seeds for less heat).

    In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side, or until pliable.
