Calamari

Method

Preparing the Calamari

  1. 1

    Clean the Calamari

Rinse the fresh calamari under cold water, remove the skin, and cut the bodies into rings about 1/2 inch thick. Pat dry with paper towels.

  2. 2

    Mix the Coating

In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. Mix until well combined.

  3. 3

    Coat the Calamari

Dredge the calamari rings in the flour mixture, ensuring they are fully coated. Shake off excess flour and set aside.

Frying the Calamari

  1. 4

    Heat the Oil

In a large, deep skillet or pot, heat vegetable oil over medium-high heat until it reaches 375°F (190°C).

  2. 5

    Fry the Calamari

Carefully add the coated calamari rings to the hot oil in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.

  3. 6

    Drain and Serve

Using a slotted spoon, remove the fried calamari and place them on a paper towel-lined plate to drain excess oil. Serve hot.

Making the Spicy Aioli

  1. 7

    Combine Ingredients

In a medium bowl, whisk together the mayonnaise, minced garlic, lemon juice, Sriracha sauce, and salt until smooth and well combined.

  2. 8

    Taste and Adjust

Taste the aioli and adjust the seasoning, adding more Sriracha or salt to suit your preference.
