Method
Cake Preparation
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C). This ensures that the cakes will bake properly.
- 2
Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place it over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.
- 3
Whisk Eggs and Sugar
In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until the mixture is pale and slightly thickened.
- 4
Combine Mixtures
Gradually fold the melted chocolate mixture into the egg mixture. Be careful not to deflate the batter.
- 5
Add Dry Ingredients
Sift the all-purpose flour and salt into the chocolate-egg mixture. Add the vanilla extract and gently fold until just combined.
- 6
- 7
Fill Ramekins
Evenly distribute the batter among the prepared ramekins, filling each about 3/4 full.
- 8
Bake the Cakes
Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center should still be soft.
- 9
Cool and Serve
Allow the cakes to cool for 1 minute before inverting them onto plates. Serve immediately with scoops of vanilla ice cream.
