Preparation of Pork Belly

Prepare the Pork Belly

Start by trimming any excess fat from the pork belly and ensure it is a uniform thickness.

Season the Pork Belly

Rub the kosher salt, brown sugar, black pepper, and smoked paprika evenly over the pork belly. Make sure to coat all sides.

In a bowl, whisk together the apple cider vinegar, minced garlic, fresh thyme, olive oil, and honey until well combined.

Marinate the Pork Belly

Place the seasoned pork belly into a large resealable bag or a deep dish, and pour the marinade over it. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.
