Method
Prepare the Rotating Sauce
Mix sauce
In a small bowl combine Greek yogurt, Dijon mustard, honey, lemon juice, salt, and black pepper. Whisk until smooth and taste; adjust seasoning (add a pinch more salt or honey if needed). Set aside.
Assemble the Sandwich
Butter and mayo
Lightly butter one side of each sourdough slice. On the unbuttered side of one slice, spread mayonnaise evenly. The buttered sides will face the griddle later.
Layer protein and cheese
On the mayo-coated slice, layer the roast turkey, smoked ham, and place the two slices of cheddar over the meat to help bind the sandwich when heated.
Add vegetables
Top the cheese with butter lettuce leaves, tomato slices, red onion rings, and pickle slices. Spoon half of the Rotating Sauce over the vegetables to introduce flavor without sogginess.
Finish assembly
Close the sandwich with the second slice of bread, buttered side out. Press gently to compact the layers. Insert toothpicks through two opposite corners if desired to secure.

Flip and rotate
Using a spatula, flip the sandwich and cook the other side until golden, another 3–4 minutes. To achieve the 'rotating' concept (a playful presentation): once both sides are toasted and cheese is melted, hold the sandwich upright on its short edge and rotate it slowly while resting on the spatula or a plate to expose all sides briefly for serving presentation. This step is optional for flavor but recommended for theatrical service — it helps redistribute warm fillings slightly so every bite is balanced.
Rest and slice
Transfer the sandwich to a cutting board and let rest 1 minute to let juices settle. Slice in half on the diagonal or straight down, removing toothpicks if used. Spoon the remaining Rotating Sauce on the plate or drizzle lightly over the cut faces.
Serve
Plate the sandwich halves with your choice of side (chips, a small salad, or fries). Encourage the diner to ask the server about any daily special variation — substitute different proteins, cheeses, or a warm pressed style depending on today's special. Enjoy immediately while warm.
