Prepare the Ice Cream Base

In a medium saucepan, combine the heavy cream, whole milk, sugar, and salt. Heat over medium heat until the mixture is warm and the sugar has dissolved.

Temper the Egg Yolks

In a separate bowl, whisk the egg yolks. Slowly pour about a cup of the warm cream mixture into the egg yolks, whisking constantly to temper the yolks.

Combine and Cook

Pour the tempered yolks back into the saucepan with the remaining cream mixture. Cook over medium heat, stirring constantly until the mixture thickens enough to coat the back of a spoon (about 170°F/77°C). Do not let it boil.

Chill the Mixture

Remove from heat and stir in the vanilla extract. Let the mixture cool at room temperature for about 30 minutes, then cover and refrigerate for at least 4 hours or overnight.

Churn the Ice Cream

Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Freeze

Transfer the ice cream to an airtight container and freeze for at least 4 hours until firm. Scoop and serve!
