Prepare the Grits

Cook the Grits

In a medium saucepan, bring water to a boil. Stir in the stoneground grits and salt. Reduce heat to low and simmer for about 20-25 minutes, stirring occasionally until thickened. Once cooked, stir in butter until melted and well combined.

Prepare the Shrimp and Sauce

Sauté the Sausage and Vegetables

In a large skillet, heat olive oil over medium heat. Add sliced sausage and cook until browned. Add diced bell pepper, onion, and minced garlic, sautéing until the vegetables are tender.

Add Shrimp and Cream

Add the peeled shrimp to the skillet, cooking until they turn pink. Stir in the canned diced tomatoes, spinach, and creole seasoning. Pour in the heavy cream and let simmer for 5-7 minutes until the sauce thickens slightly.

Toast the Bread

Prepare Toast

While the shrimp and grits are cooking, toast the gluten-free bread slices until golden brown.

Serve

Spoon the creamy shrimp mixture over a bed of grits and serve with toasted bread on the side.
