Prepare the Pork
Pound the pork cutlets to about 1/4 inch thickness using a meat mallet. Season both sides with salt and black pepper.
Set Up Breading Station
In three separate shallow dishes, place the flour, beaten eggs, and breadcrumbs.
Bread the Cutlets
Coat each pork cutlet in flour, shaking off the excess. Dip into the beaten eggs, then coat with breadcrumbs, pressing gently to adhere.
Fry the Schnitzel
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add breaded cutlets in batches, frying for about 3-4 minutes on each side or until golden brown and cooked through. Drain on paper towels.
Serve
Serve the schnitzels hot, garnished with lemon wedges and chopped fresh parsley.
