    Prepare mushrooms

    Preheat oven to 375°F (190°C). Wipe mushroom caps clean with a damp paper towel. Gently remove stems and, if desired, reserve the stems for another use. Place caps cavity-up on a baking sheet lined with parchment or lightly oiled.

    Brush the outside and inside of each mushroom cap lightly with 1 tablespoon olive oil. Season the inside of the caps with 1 teaspoon salt and 1/2 teaspoon black pepper. Set aside while you make the filling.

    If mushroom caps are very wet after cleaning, pat dry to prevent soggy shells during baking.

Spinach-Parmesan Filling

    Cook spinach and aromatics

    Heat 1 tablespoon olive oil and 1 tablespoon unsalted butter in a large skillet over medium heat. Add 1/4 cup finely diced onion and cook until translucent, about 3–4 minutes. Add 2 minced garlic cloves and cook until fragrant, about 30 seconds.

    Add 8 oz packed fresh baby spinach in batches, stirring until wilted before adding more, about 2–3 minutes total. Remove skillet from heat and transfer wilted spinach and aromatics to a fine mesh sieve or bowl. If using a sieve, press gently with the back of a spoon to remove excess liquid; if using a bowl, let cool slightly and squeeze out moisture with clean kitchen towel or paper towels until filling is only slightly damp. Proper draining prevents a soggy filling.

    Combine filling ingredients

    Chop the drained spinach finely and return to a mixing bowl. Add 4 oz softened cream cheese, 1/4 cup ricotta, 3/4 cup grated Parmesan, 1 large egg, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/8 teaspoon freshly grated nutmeg (optional). Stir until smooth and well combined. Taste and adjust seasoning, adding 1/8 teaspoon red pepper flakes if you want a hint of heat.

    If the filling seems too loose, add up to 1–2 tablespoons additional grated Parmesan or a tablespoon of breadcrumbs to help bind; if too dry, stir in 1 tablespoon ricotta or cream to reach a scoopable consistency.

Assemble & Bake

    Stuff mushrooms

    Using a small spoon or a piping bag, mound about 1 to 1 1/2 teaspoons (approximately 1 tablespoon) of the spinach-Parmesan filling into each prepared mushroom cap, slightly overfilling so the top is rounded. Arrange the stuffed mushrooms evenly on the baking sheet.

    Sprinkle the tops lightly with 1/4 cup extra grated Parmesan. If using, add a small pinch of shredded mozzarella to each for a melty top.

    Bake

    Bake in the preheated 375°F (190°C) oven for 18–22 minutes, until the mushrooms are tender and the filling is set and lightly golden on top. If the tops brown too quickly, tent loosely with foil for the final 5 minutes.

    Optional finish: For a lightly crisped top, switch the oven to broil for 1–2 minutes, watching carefully to avoid burning.

Garnish & Serve

    Remove mushrooms from oven and let rest for 3–4 minutes. Sprinkle with 2 tablespoons chopped fresh parsley and 1/2 teaspoon lemon zest, if using, for brightness.

    Serve warm on a platter. These are best eaten the day they are made but can be held warm on a low oven setting (200°F / 95°C) for up to 30 minutes.
