Crawfish Popcorn

Prep crawfish
Pat the crawfish tail meat dry with paper towels. If using previously frozen crawfish, ensure they are fully thawed and well drained. Place in a medium bowl and refrigerate until ready to bread.

Make dredge
In a shallow bowl, whisk together the all-purpose flour, cornstarch, cornmeal, baking powder, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper until evenly combined.

Make wet batter
In a separate bowl, whisk the buttermilk and eggs until smooth. This mixture should be slightly thick but pourable; if very thick, whisk in 1 tablespoon water or buttermilk to loosen.

Heat oil
Pour enough vegetable oil into a heavy-bottomed pot or Dutch oven to create a 2–3 inch deep frying pool (about 3 to 4 cups depending on pot size). Heat the oil over medium-high heat until it reaches 350°F (175°C). If you do not have a thermometer, test by dropping a pinch of dredge into the oil — it should sizzle and rise immediately.

Bread the crawfish
Working in batches of about 6–8 pieces to avoid overcrowding, drop a few crawfish tails into the wet batter to coat, then transfer immediately to the dry dredge and toss to coat evenly. Shake off excess flour mixture and set the breaded crawfish on a wire rack or tray while you continue with remaining pieces.

Fry until golden
Carefully lower a single batch of breaded crawfish into the hot oil using a slotted spoon or spider. Fry for 1.5–2.5 minutes, turning if needed, until the coating is golden brown and crisp and crawfish are heated through (they cook very quickly). Do not overcrowd the pot. Remove with a slotted spoon and transfer to a paper towel–lined tray or wire rack set over a baking sheet to drain.

Finish and season
While still hot, season the fried crawfish lightly with a pinch of salt. Repeat frying with remaining batches, allowing the oil to return to 350°F between batches. Keep finished batches warm on a low oven (200°F / 95°C) if desired.

Garnish
Sprinkle chopped fresh parsley over the crawfish popcorn and serve immediately with lemon wedges and the tomato-chipotle dipping sauce.

In a small bowl, whisk together the tomato paste, mayonnaise, and Greek yogurt (or sour cream) until smooth and uniform in color.

Add the minced chipotle, adobo sauce, honey, apple cider vinegar, smoked paprika, minced garlic, salt, and black pepper. Whisk thoroughly. Taste and adjust heat or sweetness by adding more chipotle or honey as desired.

If the sauce is too thick, thin with 1 tablespoon warm water at a time until you reach a dip-consistency. Chill in the refrigerator for at least 15 minutes to let flavors meld; bring to room temperature just before serving.

Transfer to a small serving bowl alongside the crawfish popcorn.
