Prepare the Potatoes

Peel and dice the potatoes into small cubes. In a pot of boiling salted water, cook the potatoes until tender, about 10-15 minutes. Drain and set aside.

Cook the Vegetables

In a large skillet, heat olive oil over medium heat. Add the chopped onion and bell pepper, sautéing until soft, about 5 minutes.

Combine Ingredients

In a large bowl, whisk together the eggs, salt, and black pepper. Add the cooked potatoes, sautéed vegetables, and parsley to the egg mixture. If using, fold in the shredded cheese.

Cook the Omelet

Pour the egg mixture back into the skillet and cook on low heat. Use a spatula to gently lift the edges while tilting the skillet to allow uncooked egg to flow to the edges. Cook until the eggs are set, about 10-15 minutes.

Add Chorizo

Once the omelet is set, layer the thinly sliced chorizo over the top and cover the skillet for an additional 5 minutes to warm the chorizo.

Cut the omelet into squares and serve warm. Garnish with additional parsley if desired.
