Prepare and Fry

Stack the corn tortillas and cut into 1/2-inch strips. In a medium skillet or pot, heat vegetable oil over medium-high heat until it reaches 350°F (if you have a thermometer) or a small piece of tortilla sizzles immediately. Fry tortilla strips in batches for 1–2 minutes, stirring occasionally, until crisp and lightly golden. Use a slotted spoon to transfer to a paper towel–lined plate and immediately sprinkle with 1/2 teaspoon kosher salt. Reserve until assembly.

Breakfast Potatoes

Par-cook Potatoes

Place diced potatoes in a pot, cover with cold water, add a pinch of salt, bring to a simmer and cook 4–5 minutes until just tender but not falling apart. Drain and pat dry.

Pan-Fry Potatoes

Heat 2 tablespoons olive oil in a large nonstick or cast-iron skillet over medium-high heat until shimmering. Add diced onion and red bell pepper and sauté 2–3 minutes until softened. Add par-cooked potatoes in a single layer, let sit undisturbed 3–4 minutes to brown, then toss and continue to cook another 6–8 minutes until evenly golden and crisp. Season with 3/4 teaspoon kosher salt, 1/4 teaspoon black pepper, 1/2 teaspoon smoked paprika and 1/4 teaspoon ground cumin. Taste and adjust seasoning. Keep warm while finishing eggs.

Pico de Gallo

Combine the diced tomatoes, 1/4 diced onion, minced jalapeño, chopped cilantro, 1 tablespoon lime juice and 1/2 teaspoon kosher salt in a bowl. Stir and let sit 10 minutes at room temperature to meld flavors. Taste and adjust lime or salt as needed. Keep chilled or at room temp.

Beat the Eggs

Crack 6 eggs into a bowl, add 1 tablespoon half-and-half (or milk), 1 teaspoon kosher salt and 1 teaspoon freshly ground black pepper. Whisk thoroughly until fully blended and slightly frothy.

Cook the Eggs

In a large nonstick skillet over medium-low heat, melt 2 tablespoons unsalted butter with 1 tablespoon neutral oil (oil raises the smoke point). When butter foams and just begins to subside, pour in the beaten eggs. Let eggs sit undisturbed 15–20 seconds, then gently push cooked edges toward the center with a spatula, allowing uncooked egg to flow out. When eggs are about 70% set but still glossy, fold in half of the prepared tortilla strips (reserve remainder for garnish) and gently stir so strips warm and soften slightly while the eggs finish cooking. Remove from heat when eggs are softly set but still moist; they will continue to cook off the pan heat. Taste and adjust salt and pepper.

Assembly & Garnish

Divide warm breakfast potatoes among 4 plates (or family-style). Spoon a portion of the scrambled eggs with tortilla strips (migas) on top or alongside the potatoes. Sprinkle each serving with crumbled queso fresco, remaining crispy tortilla strips for crunch, and sliced green onions. Add a spoonful of pico de gallo to each plate and avocado slices if using. Serve with warmed corn tortillas or additional hot sauce/salsa on the side.

To warm corn tortillas: heat a dry skillet over medium and warm tortillas 20–30 seconds per side until pliable, or wrap in foil and heat in a 350°F oven for 10 minutes.
