Heat 1 tablespoon unsalted butter in a medium skillet over medium-high heat until foaming. Add minced shallot and cook 1–2 minutes until translucent but not browned.

Add minced garlic and chopped thyme; cook 30 seconds until fragrant. Deglaze pan with 30 ml dry white wine, scraping up browned bits. Cook until wine has mostly evaporated, about 1–2 minutes.

Stir in 30 ml heavy cream and simmer 1 minute to bind. Season with 1 teaspoon salt and 1/2 teaspoon black pepper. Remove from heat and set aside to cool slightly while finishing other components.
Truffle Butter & Finishing

Make truffle butter: In a small bowl, combine 40 g softened unsalted butter with 1 teaspoon black truffle oil, 30 g grated Parmesan, 1 tablespoon finely snipped chives, 1/4 teaspoon sea salt and 1/4 teaspoon freshly ground black pepper. Mix until smooth and homogeneous.

Taste and adjust seasoning; if you prefer a stronger truffle flavor, add up to another 1/4 teaspoon truffle oil. Reserve at room temperature so it remains spreadable.

Separate the eggs while keeping yolks whole. Place the 4 egg whites in a clean, dry mixing bowl and the 4 yolks in a small bowl; cover yolks with a little milk/cream and 1/4 teaspoon salt and whisk lightly to combine. Set yolks aside.

Add 1/4 teaspoon cream of tartar to the egg whites. Using an electric mixer or whisk, beat the whites starting at low speed then increasing to high until soft peaks form. The whites should be glossy and hold shape but still be slightly billowy (about 2–3 minutes with a mixer).

Gently fold one-third of the whipped whites into the yolks to lighten, using a silicone spatula. Then gently fold in the remaining whites in two additions with wide strokes to keep the mixture airy; do not overmix — stop when streaks disappear.

Heat a 10–12 inch nonstick skillet over medium-low heat and add 1 tablespoon unsalted butter, swirling to coat. Reduce heat to low. Spoon the egg mixture into the pan and tilt to form a round, even disk approximately 3/4 inch thick. Cover the pan with a lid immediately to trap steam and cook gently for 2–3 minutes until the top is mostly set but still slightly glossy.

Meanwhile, rewarm the duxelles briefly in a small pan over low heat if needed so it is warm but not watery.

Use a spatula to gently fold the empty half of the omelette over the mushroom-topped half, creating a half-moon. Keep the heat low and cover for another 30–45 seconds to allow the interior to finish setting without browning. The center should remain soft and cloud-like.

Slide the omelette onto a warm plate. Finish with a light sprinkle of extra grated Parmesan and the remaining snipped chives. Tear a small pat of any remaining truffle butter on top so it melts over the omelette. Optionally, finish with a few drops of truffle oil for aroma.

Serve immediately while still warm and airy.
