Prepare Ingredients

    Finely chop the fresh dill. Drain the capers and pat them dry. Slice the smoked salmon into 1/2-inch strips or bite-size pieces. Zest the lemon lightly and then cut it in half; reserve half for finishing and squeeze the other half to extract the juice.

Make Dill-Infused EVOO (if not pre-made)

    Quick infusion

    Warm 1 tbsp extra-virgin olive oil in a small saucepan over the lowest heat for 1 minute with a sprig of dill (or 1 tsp dried chopped dill). Remove from heat and let steep 10 minutes. Strain and measure 1 tsp for the omelette. (If you have ready-made dill-EVOO, skip this step.)

Prepare Egg Mixture

    Crack the eggs into a small bowl, add milk, salt and pepper. Whisk vigorously until fully blended and slightly frothy, about 20–30 seconds. This creates a silky texture for the omelette.

Cook the Omelette

    Heat the nonstick skillet over medium-low heat. Add the butter and swirl until melted and foaming but not browned.

    Pour the beaten eggs into the skillet. Immediately reduce heat to low. Using a rubber spatula, stir gently in small circular motions for 10–15 seconds to create small curds, then stop stirring and let the eggs set for 20–30 seconds.

    When the edges are mostly set but the center remains slightly loose and glossy, run the spatula around the edges to lift them, tilt the pan to let uncooked egg flow underneath, and cook another 10–15 seconds until the surface is just creamy but not wet.

Assemble Filling

    Lower the heat to the lowest setting. Distribute the sliced smoked salmon evenly over half of the omelette. Dollop the crème fraîche in three small spoonfuls over the salmon. Scatter the drained capers and half of the chopped dill over the crème fraîche and salmon.

    Using the spatula, gently fold the empty half of the omelette over the filled half to create a semi-circle. Let it sit in the pan off the heat for 15–20 seconds to warm the filling through without overcooking the eggs.

Plate & Finish

    Slide the omelette carefully onto a warm plate, seam side down. Drizzle the dill-infused EVOO over the top in a thin ribbon. Sprinkle the remaining chopped dill, lemon zest, and the capers reserved for garnish (if any) on top.

    Squeeze the reserved half lemon lightly over the omelette to add brightness, then season with a small crack of black pepper to taste. Garnish with microgreens or baby arugula if desired.

Serve

    Serve immediately while the omelette is warm and silky. Offer additional crème fraîche, lemon wedges, or extra capers on the side.
